This sausage and fennel pasta is the perfect back to school dinner idea, especially on busy weeknights.My recipe has a hearty tomato sauce and is also enhanced with fresh basil, which pairs nicely with the sweet, anise-like character of the fennel.
- 1 lb pork sausages (removed from casing) about 450g
- ½ lb pasta I used Orecchiette
- 1 teaspoon fennel seeds crushed
- ½ cup onion finely chopped
- ½ Tablespoon garlic finely chopped
- 400 g whole plum tomatoes
- 1 teaspoon red pepper flakes
- 2 Tablespoons tomato paste
- 2Tablespoons unsalted butter Replace with olive oil
- 5 g fresh basil
- ½ cup Parmesan cheese shredded
- Salt and pepper, adjusted to your preference

Melt the unsalted butter over medium heat until it’s hot, then add the chopped onions and cook, stirring, until they turn soft, translucent, and aromatic.

While the tomato sauce simmers, cook the pasta in a separate pot for 1 minute less than the package suggests. When it’s ready, drain it and hold it aside, saving roughly 1 cup of pasta water for later.
