How can a nonbaker wow family and friends? You bake cakes, brownies, and similar treats using cake mix. Thanks, Betty crocker! you’ve been helping people for ages. If you’ve ever asked whether cake mix can work for fudgy brownies, the answer is yes—and they’re also quite easy to create.
Cake mix brownies are a fast, no-fuss dessert you can prepare in a flash. You only need a cake mix, eggs, vegetable oil, and chocolate chips (if you’d like).
What makes these brownies great is that they taste just as good as a homemade batch, without all the extra effort! If these brownies don’t satisfy your sweet cravings, I truly don’t know what will.
This, just like my homemade chocolate cake recipe is ideal for any time of year—thanksgiving, Christmas, and Easter included. So, put on your apron and let’s pretend we’re whipping up a big batch in the kitchen, though really we’re just creating a lazy-girl brownie.
Why this recipe is soo good
- This simple recipe literally takes 5 minutes to assemble; it uses only a handful of ingredients and one bowl, so cleanup is quick and easy.
- It’s easy to tweak, and you can use whichever cake mix you prefer. I’m partial to chocolate cake mix.
- It’s incredibly fast, super easy to make, and absolutely delicious!
- No complicated set of directions—just mix eggs, oil, and choc chips into the prepared cake mix and you’re finished.
Tools needed
Mixing bowl
Spatula
8×8 square baking pan
Ingredients
To make your brownies with cake mix, you’ll need the following ingredients
Chocolate cake mix: I am using betty croaker (it’s simply the best, not sponsored btw), but you can choose any brand you like
Eggs at room temperature
Vegetable oil
Chocolate chips or chunks (optional, but recommended)
How to make brownies with cake mix step by step recipe instructions.
First, heat the oven to 350F/170C, spray an 8×8 square baking pan with oil, add parchment paper, and set it aside.
In a mixing bowl, combine cake mix, eggs, oil, choc chips, and mix until everything is incorporated
Pour the brownie batter into the baking pan and spread it out evenly
Bake for 20-25 minutes
Allow to cool for around 10 minutes, then cut into 9 or 12 squares. Enjoy as-is, or serve with a scoop of ice cream or a drizzle of caramel sauce.
PS: this recipe is intended to turn out dense and fudgy, though you’ll know pretty quickly whether it’s wet or tacky.
How to tell when brownies are done
If you’re baking a cake-style recipe, it helps to use a timer to keep the baking time on track. That way, you don’t accidentally overbake—in this case, the brownies only need about 20-30 minutes.
When you place a toothpick or cake tester in the center of your brownie and it comes out with wet batter, it likely needs another 3 to 5 minutes.
If the toothpick shows a gooey, sticky coating, then they’re ready. If you want a more cake-like brownie, the toothpick should come out clean. Just be cautious—at this point, you don’t want to underbake.
To recap: use a timer, watch the toothpick/cake tester for staining, but this isn’t the only option—you can also check visually. When the edges look crackled and the center is firm and no longer wobbly, your brownies are done.
How long are brownies good for
Keep brownies in an airtight container for up to 3 days at room temperature. In the fridge, they’ll stay good for up to a week. I honestly doubt they’ll last that long. Personally, I don’t store cakes or brownies at room temperature beyond 24 hours. They really belong in the fridge!
Freezer: If you’d like to freeze them, wrap them in plastic, then put them in a freezer bag or an airtight container, and freeze for up to 3 months
Tips
- No chocolate chips on hand? Make these brownies using only 3 ingredients: cake mix, oil, and eggs
- Upgrade your boxed brownie mix by adding chopped nuts, crumbled cookies, crushed Oreos, M&M candies, and—if you want—extra chocolate.
- Any cake mix works, red velvet, yellow cake mix, strawberry, vanilla—everything comes out well in this recipe.
- Double the ingredients and bake in a 9×13 inch cake pan.
- Choose cake mix from trusted brands like Betty Crocker, Duncan Hines, Dr. Oether, and more.
