How to make creamy carrot soup
Rinse and peel the carrots, then chop them into small pieces.
Warm the butter (or olive oil, if you prefer) in a saucepan over medium heat. Add the onion and carrots, then sauté for 3–5 minutes until they turn tender and fragrant.
Pour in the vegetable stock, season with salt and black pepper, and stir well to combine.
Bring everything to a boil, then lower the heat and let it simmer for 15–20 minutes, until the carrots are very soft.
Take the pot off the heat and let the soup cool a little. Stir in the Boursin cheese, then blend (with an immersion blender or a blender) until silky smooth. Taste and fine-tune the seasoning with salt and black pepper.
Spoon into bowls and finish with green onions, red pepper flakes, and crusty bread. Serve hot and savour.
How to store
Allow the soup to cool fully before packing it away. Place it in an airtight container, then refrigerate for as long as 4 days. Warm it again slowly on the stovetop or in the microwave, stirring from time to time. If it thickens, loosen it with a bit more broth or water. This soup also keeps well in the freezer for up to 3 months. Defrost overnight in the fridge before reheating.

- 30 g Unsalted butter
