How to Make Crunchie Rocky Road – Step-by-Step Instructions

Step One

Chop the chocolate finely. This takes a bit of time, but it helps you achieve a silky blend and lowers the chance of it separating.

Step Two

Cut the Crunchie bars into small, snack-size pieces, then keep them in the fridge until you’re ready to use them. They don’t need to look tidy—messy is totally fine.

Step Three

Crush the biscuits in a large mixing bowl. I do it with my hands, which stops them becoming overly tiny. As before, irregular pieces are okay.

Step Four

Grease and line a cake tin. I’m careful to do both so it’s simpler to lift out later.

Step Five

Add the margarine and golden syrup to a saucepan, then heat over medium. Stir from time to time.

You can also melt them in the microwave. I don’t have one.

Step Six

Keep mixing until the butter has fully melted and the mixture is hot.

Step Seven

Take it off the heat.

Step Eight

Add the chocolate in 3 or 4 portions, stirring each time until completely melted before adding the next.

Step Nine

Allow it to cool for at least 10 minutes, just until it’s chilled but still pourable. Stir occasionally.

Step Ten

In a large mixing bowl, combine the biscuits, marshmallow, and most of the crunchie—set aside a few pieces to place on top. This step is optional; if you’d rather, you can mix everything together immediately.

Step Eleven

Pour in roughly 3/4s of the melted chocolate mixture.

Step Twelve

Stir well, making sure you 6dig down to the bottom until the biscuit mix is fully coated in chocolate.

Step Thirteen

Tip the mixture into the ready tin, then press it down firmly with a spatula to level it out.

Step Fourteen

Drizzle the remaining chocolate on top and smooth it over until the surface is even.

Step Fifteen

Push the leftover Crunchie pieces into the top layer.

Step Sixteen

Chill in the refrigerator for at least 5 hours.

Step Seventeen

Gently lift it out of the tin, remove the paper, and then slice into bars or squares.
