Cajun rice, aka Dirty rice
This is one of my go-to dishes for leftover rice. My take on Cajun dirty rice is bursting with flavor and packed with protein. It’s incredibly simple to prepare and ready in less than 30 minutes.

What you will need
Cooked white long-grain rice
Ground beef
Mixed bell peppers: I used red, yellow and green bell peppers
Celery
Onion
Garlic
Olive oil
Oregano
Beef stock
Cajun seasoning: I used store-bought for this recipe. Be sure to choose the Cajun seasoning you enjoy, though ideally a low-salt or salt-free option.
Salt and black pepper to taste
How to make Cajun rice
Warm the olive oil in a large skillet over medium-high heat. Add the chopped bell peppers, celery, salt, and black pepper to taste, then cook and stir until they’re tender-crisp. Stir in the chopped garlic and cook for 30 seconds. Add the ground beef to the vegetables, breaking it up as it cooks. Mix in the oregano, Cajun seasoning, and beef stock, then simmer until the meat is fully browned.
Stir the cooked rice into the beef mixture and mix thoroughly. Taste it and tweak the seasoning as needed. Right before taking it off the heat, fold in some chopped green onions.
Plate it up and enjoy!

How to store
- Move any leftover rice to an airtight container and refrigerate for as long as 3 days. You can also freeze it for up to 3 months.
- Warm it again in a skillet over medium heat, stirring occasionally, until hot throughout, or microwave it until it’s steaming.

Cajun Dirty Rice
This is one of my go-to dishes for leftover rice. My version of Cajun dirty rice is loaded with flavor and rich in protein. It’s very simple to put together and ready in under 30 minutes.
- 4 cups cooked long-grain white rice
- 500 g ground beef
- 3 assorted bell peppers diced
- 2 celery ribs diced
- 1 medium onion finely chopped
- 3 garlic minced
- 2 Tablespoons olive oil
- 1 teaspoon oregano
- 1 beef stock cube I adore OXO and Knorr, and if you’re using liquid seasoning, use ½ Tbsp
- 1½ Tablespoon Cajun seasoning
- Salt and freshly ground black pepper, to taste

Introduce the ground beef into the vegetables and crumble it as it cooks. Add oregano, Cajun seasoning, and the beef stock, then continue cooking until the meat is fully browned.*Make sure the beef is thoroughly cooked before moving on to the next step

Fold in the cooked rice and stir until everything is evenly mixed. Check the seasoning and tweak as needed. Right before removing from the heat, stir in chopped green onions.
